This a great way to enjoy eggplant along with your favourite crisp bread or pita. I love it as an appetizer when I'm making anything inspired.
Wash and chop eggplant into inch thick strips, sprinkle a little oil and salt and bbq on medium for 10 min per side
add to blender with other ingredient
blend until smooth
*remove charred skin before adding eggplant to blender
**bbq 1/2 a lemon too for an additional smokey flavor
