Cheesy Nacho Bites

These are a great game night appetizer or perfect for any casual dinner party. I've even made them as a meal for the hubby and I. Add or remove toppings to make this your own.

 2 bags regular Doritos
 2 tablespoons melted butter
 1 cup cheddar cheese, shredded
 3 tablespoons avocado oil, separated
 1 cup refried beans
 ½ pound ground beef
 ½ cup sour cream
 1 cup nacho cheese sauce
 2 small
 1 cup shredded iceberg lettuce
 1 green jalapeño, thinly sliced
 1/2 cup cilantro leaves, diced
 1 small spanish onions, diced
 2 garlic cloves, chopped
 2 serrano chilies or jalapeños, diced
 1 (15 oz) can diced roasted tomatoes
 Salt and pepper, to taste

Preheat the oven to 350°F.

Warm 2 tablespoons of oil in a medium saucepan over medium heat.

Add half onions and cook until tender and translucent.

Add the garlic and chilies, cooking until fragrant.

Add the tomatoes and bring them to a boil.

Reduce the heat and simmer until the sauce thickens, stirring occasionally.Remove from heat.

Add salt, pepper and cilantro - setting two tablespoons aside.

Place the Doritos in a sealable bag and crush them with a rolling pin, then place into a medium-sized bowl. Add the cheese to the bowl of chips.

Pour the melted butter over the cheese-chip mixture, and stir to combine.

Using a tablespoon, divide the mixture evenly into a greased mini-muffin tin.

Set the tin in the oven for approximately 8 minutes, or until the edges become golden brown.

Add the ground beef and cook through. Remove from heat and set aside.

Allow the nacho chip cups to cool, and then remove them from the tin.

Top with refried beans, salsa, ground beef, onions, nacho cheese sauce, sliced jalapeños, and cilantro.
