Understanding recipe timing

Plan preparation, cooking, chilling and resting time.

Read the total and the breakdown

Open Timing breakdown on a recipe to see the durations stated in its method. Some stages run at the same time. A timer for one stage is not the recipe’s total time.

Allow for waiting

Check for overnight chilling, marinating, cooling and resting before starting. Time labelled as preparation alone does not include those waits.

Use timers with doneness checks

A timer tells you when to check the food. Use the texture or thermometer instructions in the method to decide whether it is ready. Portion controls do not change the timer durations.
