Baked Creamy Chicken Bacon and Spinach Pasta

The perfect dish to warm you up on a cold day. All you need is one pot, so less mess at the end of it. I hope your family enjoys this as much as mine does.

 1/2 small Spanish onion
 6 cloves garlic, finely minced
 6 strips bacon, diced
 2 chicken breasts, sliced
 1/2 cup baby spinach - washed and dried
 2 teaspoons salt
 1 teaspoon pepper
 5 cups skim milk
 1 packange of penne pasta (dried works best)
 1 cup Parmesan cheese, grated, extra on the side for topping.

Set fry pan over medium heat. Add the onion let begin to caramelize, about 5 minutes.

Add the garlic, and cook for another two minutes.

Take off heat and add to small dish and set aside.

Place pot over medium high heat and add the bacon, turning frequently until crisp.

Add the chicken and cook until no pink is showing. Remove the chicken.

Cook the spinach, with the bacon, adding the salt, and pepper.

After 2 minutes, add the onion and garlic to the pot. Cook until the spinach has wilted.

Put the chicken back in the pot and add the milk, stirring the mixture fully.

Bring the milk to a boil, then add the pasta.

Stir constantly for about 10 minutes, until the pasta is cooked.

Add the Parmesan, then mix until the cheese has melted.

Add extra salt and pepper to taste.
