Preheat oven to 425 degrees. Combine the olive oil, salt, and cayenne pepper in a small bowl and whisk together. Line a baking sheet with parchment paper.
Add the cauliflower to a large bowl. Pour the olive oil mixture over top the bowl of cauliflower. Spread the cauliflower over the lined baking sheet and place in the oven for at least 1 hour, turning every 15 minutes. You will want to look for a caramelization to form on the outsides of the floret for best flavour. Eat immediately.
