How to make Savory Pumpkin Hummus with Lemon and Cumin
- 01
Drain and rinse the chickpeas. Add them to the food processor with pumpkin, tahini, lemon juice, olive oil, garlic, cumin and salt.
- 02
Blend for about 1 minute. Stop the machine and scrape the bowl, then add the water and blend for another 1 to 2 minutes until smooth. Add extra water a teaspoon at a time only if needed.
- 03
Spoon into a shallow bowl and make a swirl with the back of a spoon. Add the optional oil drizzle, pumpkin seeds and paprika. Serve with cucumber and pita, or cover and refrigerate promptly.
Recipe questions
Is this a sweet pumpkin dip?
No. Lemon, garlic and cumin keep it savoury. Use plain pumpkin puree; pumpkin pie filling contains sugar and spices.
Can I make it ahead?
Yes. Refrigerate covered at 4°C (40°F) or colder and use within 3 days. Add the toppings just before serving. Keep out of the refrigerator for no more than 2 hours.
What allergens should I check?
Tahini contains sesame and ordinary pita contains wheat. Check ingredient and serving-food labels for other allergens.
Can I use it beyond a snack plate?
Spread it in a vegetable sandwich or serve alongside roasted vegetables. If using it in a packed lunch, keep the portion chilled.
