How to make Dense Bean Salad with Chickpeas and Lime

    Drain the rinsed beans well. Pat the cucumber dry so excess water does not dilute the dressing.

    Whisk lime juice, oil, cumin, salt and pepper in a large bowl.

    Fold in the beans, cooled corn, pepper, cucumber, onion and parsley until evenly coated.

    Serve immediately, or cover and refrigerate for an optional 30 minutes. Stir again before portioning into four lunch containers.

Can I use dried beans?

Use fully cooked, cooled beans. Do not add uncooked dried beans to this salad.

How long does it keep?

Refrigerate covered at 4°C or colder and use within 3 days. Keep chilled when taking it for lunch.
