This quick and easy fried rice is my absolute favorite. You've already got your protein with the egg, but feel free to add some chicken or shrimp if you like. I also keep it simple in the veggie department, but some great additions are bean sprouts, broccoli, peppers and mushrooms depending on what you like. In my opinion, this dish is just as good as take-out from your favorite Japanese spot. Enjoy!

Place a medium pot of water over medium high heat. Add your rice, and bring to a boil.
Take the rice off of the heat about a minute to a minute and a half before it should be done.
Drain any remaining water, place rice in medium bowl and fold carrots into the par boiled rice.
In a wok, heat the vegetable oil over medium heat.
Add in the onions and cook for about 5 minutes, or until they begin to caramelize.
Add the garlic and let cook until fragrant, about a minute or two.
Add the rice to the onion and garlic mixture, combining in the wok.
Add some soya sauce and then let the rice sit for a couple minutes to slightly crisp.
Next, add the frozen peas and move the rice around a little. Cook for another 5 minutes.
Make some space in the middle of the rice and add the sesame oil and the eggs. Add a little bit of soya sauce over top.
Let the eggs begin to fry and then mix them into the rice. Add additional soya sauce of desired.
remove from heat and serve.
