Heat the oven to 190°C (375°F). Set out the square baking dish.
Whisk the pumpkin, sugar, eggs, spice, vanilla, salt and baking powder in the bowl. Blend in the milk, then fold in the oats.
Transfer to the dish and level the surface. Bake about 45 minutes, until the edges colour and the middle is set. Check the centre reaches 74°C (165°F); continue baking if necessary.
Spoon into six portions. This is a soft breakfast bake rather than a crisp snack bar.
Refrigerate extra portions promptly in shallow containers, within 2 hours. Keep for 2 to 3 days or freeze. Thaw in the refrigerator and reheat only what you need to 74°C (165°F). Discard uneaten reheated portions.
Use old-fashioned rolled oats. Steel-cut oats need different liquid and timing, and quick oats produce a softer result.
No. This contains eggs and milk. Divide leftovers into shallow containers and refrigerate promptly; discard cooked food left at room temperature longer than 2 hours.
The written recipe contains milk. For gluten avoidance, ordinary oats may have cross-contact; ingredient labels and individual dietary requirements need checking. This version does not carry either diet label.
Apple cinnamon baked oatmeal offers a fruit-based alternative. Pumpkin pancakes suit a griddle breakfast, while pumpkin spice granola provides a different, crunchy texture. Follow each recipe separately.
Use the recipe’s specific storage directions when provided. Read the food storage guide for chilling and reheating food, and the measures guide before changing portions or ingredients.
