Quick and Easy Beef Rib Roast

To me, this roast tastes just like home. The brown sugar gives it a bit of a sweet flavor, and creates the most perfect tasting onions and potatoes.

 4 pound rib roast
 One large Spanish onion, chopped ridgedly
 1 pound baby potatoes, halved
 1 medium bottle yellow mustard (I prefer French's)
 1/2 cup brown sugar
 1/2 cup vegetable oil
 salt and pepper (to taste)

Preheat oven to 450 degrees.

Take roast out of the fridge and let it come up to room temperature - about 30 minutes.

In the meantime, in a large roasting pan, add the onions and potatoes to the bottom of the roasting pan. Season with pepper and salt - be as generous as you like.

Once the roast has reached room temperature, coat it generously with the yellow mustard.

Place the roast in the roasting pan over top of the onions and potatoes, bone side down.

Combine the brown sugar and oil in a small bowl to create a paste.

Rub the paste on the top of the rib roast.

Place the roast in the oven and let it cook for 15 minutes, then reduce the temperature to 325 degrees.

Cook for about an hour, or until the internal temperature reaches 110 degrees.

Remove the roast from the oven and set on a slicing board, meanwhile placing the onions and potatoes back in the oven to cook a little bit longer.

Let the roast sit for 15 to 20 minutes to increase the internal temperature, while the onions and potatoes cook in the oven. remove from oven and slice the roast.

Serve onions and potatoes on the side.
