This is an easy, minimal ingredient pasta dish that tastes like heaven! Spaghetti is my preference, but feel free to use the noodle of your choice!

Step 1: chop up the onion and garlic, and bacon. Beat the eggs in a bowl and add some salt and pepper. Fill a medium pot with water, add a tsp of salt, bring to a boil.
Step 2: Add the olive oil to a non stick frying pan and set the burner to a medium low heat. Once the oil is heated, add in onions Cook onions for about 5 minutes or until they begin to turn transparent. Lower the temperature and add in the garlic.
Step 3: Add the noodles to the water and bring pot to a boil. Cook for about 10 minutes, or until the noodles have reached your desired texture.
Step 4: In a separate frying pan, cook the bacon for about 5 minutes, add to the mixture of onion and garlic. Combine onions, garlic and bacon in pan for about 5 additional minutes.
Step 5: Drain the noodles, and add them to the pan with the bacon onions and garlic. Mix that and let it for 3-4 minutes. Keep some pasta water just in case!
Step 6: Add the parmesan cheese to the egg mixture. Take the pan with the pasta off the heat and add the egg mixture to the pan with the pasta. Use tongs to mix the pasta with the egg mixture to ensure it mixes well and the eggs don't scramble. If the dish does get a little dry before serving, a splash of hot pasta water will do the trick for reviving it.
Step 7: add some extra parmesan cheese on top and voila! Delicious spaghetti carbonara.
