Bacon Weaved Stuffed Toast

Bacon, bacon, bacon! This is a great treat for any bacon lover to enjoy at a weekend brunch.

 2 slices sandwich bread
 25 g meat sauce
 20 g shredded cheese
 pepper
 10 slices bacon
 sprig of rosemary
 1 soft poached egg
 baby leaf greens

Flatten the centre of the bread with the back of a spoon.

Spread meat sauce on both slices. Place baby leaf greens, a soft poached egg and shredded cheese on one side.

Place the other slice of bread on top and wrap completely with the bacon strips.

Cook 2 minutes on one side. Flip it over and cook the other side for another 2 minutes.

Cover and cook for another 6 minutes.

Sprinkle with pepper and garnish with a sprig of rosemary.
