Blueberry Oatmeal Banana Muffins

Simple, delicious and not overly sweet, these muffins are great for breakfast or snack time!

 2 Ripe Bananas, crushed
 1 Cup Fresh or Frozen Blueberries, (if using frozen, let thaw for about 20 minutes)
 1 Egg
 1 Cup All Purpose Flour
 1 1/2 Cups Oats
 2/3 Cup Brown Sugar
 1 Tsp. Baking Powder
 2 Tsp. Cinnamon
 1/2 Cup Butter
 1 Tsp. Vanilla

Heat oven to 350 degrees.

Crush bananas in a small bowl and set aside

Beat together sugar and butter.

Beat in egg and vanilla

Stir in crushed bananas and blueberries

In a medium bowl, mix together the flour, oats, cinnamon and baking powder.  Stir into banana mixture.

Grease 12 muffin tins, or use muffin liners.  Fill about 3/4 way with batter.

Bake for 20 minutes or until toothpick inserted in the center comes out clean.
