Broccoli and Potato Mash

I love making this dish, its quick and the kids love it. Plus if you boil a bunch of extra chopped potatoes you have tomorrows fried potatoes already cooked so they just have to crisp up.

 2 broccoli heads
 16 medium yellow potatoes
 1/4 cup really good olive oil
 4 pinches flaked sea salt

Wash and chop potatoes – make sure the potatoes are the same size so they cook the same way

Peel and chop the broccoli stem

Chop remaining head of broccoli into small pieces (smaller the better) – reserve

Add to pot and cover with COLD water

Bring to boil and reduce to medium heat until potatoes are 2 minutes away from being cooked

Add reserved broccoli, cook 2 min

Drain everything

Add olive oil and salt to pot, mash with your favourite master
