How to make Cottage Cheese Bagels with Sesame

    Heat the oven to 375°F (190°C). Line a baking sheet with parchment. Whisk flour, baking powder and salt in a bowl.

    Work in the cottage cheese to form a shaggy dough. Knead for 2 minutes. If sticky, lightly flour your hands and work surface.

    Divide into four pieces. Roll each into a short rope and firmly join the ends into a ring. Space the rings apart on the sheet.

    Brush lightly with beaten egg and scatter with sesame seeds. Bake for 22 to 25 minutes, until golden and baked through. Cool for 15 minutes before cutting.

Are these chewy like boiled bagels?

Expect a softer, bread-like texture. The dough uses baking powder and goes straight into the oven.

What if the dough is very wet?

Strain excess cottage-cheese liquid before mixing. Add dusting flour sparingly, since too much can make the bagels dense.
