Bite Size Banana Cake

These bite size treats are the perfect ending to any meal. One is just enough to feel satisfied and not to guilty - but if your in the mood for a little more, have a second one for a bigger indulgence.

 5-6 ripe bananas
 3 eggs
 ½ cup avocado oil
 ½ cup granulated sugar
 1 tablespoon cinnamon
 2 cups flour
 ½ cup butter or sunflower margarine
 1 cup brown sugar
 Vanilla ice cream (optional)

Preheat oven to 350°. degrees.

In a large bowl, mash the ripe bananas 4 or 5 of the bananas, making sure to set one aside.

Add the eggs, oil, sugar, and cinnamon, to the banana mixture, and mix well.

Add the flour and mix thoroughly. If you have a hand blender, this is a great opportunity to use it.

Place a saucepan over low heat. Add the butter or sunflower margarine and melt completely.

Once melted, add the brown sugar and cook until dissolved.

Increase the heat and bring the butter/brown sugar mixture to a boil.

Remove the saucepan from the heat.

Take out muffin tin and grease each of the cups.

Divide the butter and brown sugar (caramel) mixture between the cups in the muffin tin.

Slice the remaining banana.

Lay a banana slice in each cup.

Fill each of the cups three quarters full with banana batter.

Place tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted in the middle comes out clean.

Serve with vanilla ice cream as desired.
