Crispy Crunchy Malteser Pie

When you feel like indulging, this is the way to do it. Maltesers are one of my very favorite treats, and this pie takes my love of maltesers to the next level. I hope you love it as much as I do.

 1 large bag of Maltesers
 1/4 cup unsalted butter, melted
 1/3 cup caster sugar
 4 eggs, separated (you will only need the yolks, but don't waste the whites)
 3/4 cup dark chocolate, in small pieces
 2 cups milk (whole works best, but will work with 2%)
 3 tablespoons malt powder
 1 1/4 cups double cream
 1teaspoon vanilla extract

Throw the Maltesers into a food processor and pulse into crumbs (you don't want to pulse completely through, as you will use part of these maltesers for topping)

Take out a pie pan and combine the 3/4 of the pulsed crumbs with the melted butter, setting the other 1/4 of pulsed crumbs aside for the topping. Mix well.

Press the mixture into the pie pan using the back of a spoon or a spatula until the bottom and sides are completely covered.

Leave in the fridge and let set.

Place a medium pan over low heat and combine the egg yolks and milk until thickened.

Take off the heat and stir in the chocolate until it’s a smooth, silky consistency.

Remove the pie shell from the pan and place on a plate

Pour the chocolate filling into the pie shell and keep in the fridge until serving, at least an hour.

Just before serving whip the double cream and vanilla together until it stiffens.

Spoon over top of the pie, covering the whole surface.

Top with the remaining Maltesers.
