This is a great side to get creative with. Add in whatever additional ingredients you like to make it work for your tastes.

 2 cups corn meal
 2 teaspoons baking powder
 1 teaspoon salt
 2 eggs
 2 cups milk
 2 tablespoons unsalted butter

Preheat cast iron skillet (or cast iron muffin tin if using) in oven at 425 – rack in the middle

Add all dry ingredients to a bowl – mix

Add all wet ingredients (incl eggs) to a measuring cup – mix

Remove preheated cast iron skillet add butter to it – when butter is melted add mixture and bake at 425 until cooked – about 20 min

Use a sharp knife to insert in the middle – when it comes out clean – its ready
