Roasted potatoes are easy to make, and you can let them bake while you make the rest of your meal. They go great with a light protein such as grilled chicken, or even instead of french fries with a burger.

Pre heat oven to 375 degrees F. Line baking sheet with tin foil and rub a thin layer of olive oil over surface. Bring pot of water to boil with a pinch of salt. Drop potatoes in boiling water, let boil for 10 minutes then strain.
In a medium bowl, toss the potatoes in olive oil. Add the garlic, salt, pepper, oregano, rosemary, chilli powder, and garlic powder. Mix well.
Pour lemon juice over potatoes and toss. Spread potatoes evenly across baking sheet and place in preheated oven. Let bake for 30 minutes or until golden, turning potatoes half way through. Enjoy!
