This is a garlicky cream sauce, very popular in Greek cuisine, which is excellent with any meat or seafood entrée. It also works well as a cold dip with fresh veggies or crackers.

Peel and boil potato; set aside.
Clean garlic and crush with side of a knife or with a garlic press.
Place garlic and potato in food processor.
Soak bread in water and add to food processor.
Add olive oil, lemon juice and vinegar.
Process for 20 to 30 seconds or until smooth and creamy.
