Pumpkin Oatmeal Bars

Well, I believe autumn has finally arrived in our small rural community! The winds of change are blowing and Halloween decorations are appearing in people’s yards. Orange and yellow baskets of mums decorate planter boxes where summer flowers used to thrive. With that said, it’s PUMPKIN time! I love pumpkin, and not just for pie! Cookies, cupcakes, and muffins….here is a great recipe for pumpkin oatmeal bars. This is an easy, delicious recipe. The bars are moist and they are excellent for dessert or for a snack with coffee or tea. Also, they freeze well. This recipe makes one 9″ x 13″ baking pan.

 1 29 oz. can pumpkin
 1/2 cup sugar
 1 cup cane sugar
 1/2 cup butter
 1 tsp. vanilla
 2 eggs
 1 1/2 cups flour
 1 1/2 cups oatmeal
 2 tsp. baking soda
 1/2 tsp. baking powder
 1 tsp. cinnamon
 1/2 tsp. ground cloves
 1/4 cup powdered suger for topping

Heat oven to 350 degrees. Grease bottom and sides of 9″ x 13″ baking pan. Mix the pumpkin, sugars, eggs, butter and vanilla in a large bowl.

Mix together the flour, oatmeal, baking soda, baking powder, cinnamon and cloves in a smaller bowl and add the the pumpkin mixture.

Beat well together and pour into prepared pan.

Bake for 30-35 minutes or until toothpick inserted into the center comes out clean. Let cool and sprinkle with powdered sugar.

Cut into squares and serve. This can be stored at room temperature for up to four days or refrigerated for up to 10. Also, these freeze very well.
