We have been getting the most beautiful heirloom carrots in our Organics Live produce box this summer, and this recipe is the absolute best way to enjoy the full flavour of these beauties. These look especially beautiful on a plate when we are lucky enough to have the trip coloured heirloom variety.

Step 1: Preheat oven to 350 degrees. Thoroughly wash the carrots and trim off the stems. Peel the top layer of skin off the carrots.
Step 2: Line a baking sheet with tinfoil and pour olive oil, half the salt and pepper across the length of the sheet. Roll the carrots in the olive oil, salt and pepper coating completely.
Step 3: Place carrots in the oven and bake for 35 minutes, or until carrots are tender and slightly browned.
Step 4: remove carrots from oven, drizzle with truffle oil and lemon juice. Top with the remaining salt and ground pepper, feta, and lemon zest. Serve warm.
