Make a big batch of these potatoes and use to accompany breakfast, lunch or dinner. They are delicious fresh out of the pan or heated up later.

Set pan to medium heat with oil to heat up for at least 10 min (don’t burn the oil)
Chop potatoes, onions put in pan – don’t season now
Try not to stir too often because it will break up the potatoes instead of crisp them
In 10 min or so, mix – if potatoes are still sticking to the bottom they are not ready to be flipped
After mixing the second time add chopped tomato – cook 5 min
Add garlic scapes, season and serve
