I am an addict for potato salad, ahem, good potato salad. I am not a fan of creamed potato salads and even less, ones loaded with mayo. This is a great, healthy version of a classic. I'm sure it will be frequenting your dinner table in no time.

Dice an onion and place in a pan with some olive oil on medium heat – they take a while so get to it
Wash and scrub potatoes, dice into equal sizes
Put into pot with cold water and set to medium heat
Dice the celery, pickle and capers
Monitor potatoes, when done remove all but 10 cubes and keep cooking them a little longer (2 minutes)
Add to blender with some of the cooking water, olive oil – pulse until loose – its the dressing
Add everything to a bowl and mix once
