Asian Cucumber Salad

This a great cool cucumber salad that goes well with a nice piece of grilled fish or seafood. It’s easy to make and only involves a few ingredients. If you like the dressing, you can also use it to drizzle over a cooked piece of fish or seafood, or even a piece of chicken as well.

 2 whole seedless english cucumbers - peeled
 1/4 cup red pepper - finely chopped
 1 tablespoon soya sauce
 1/4 cup rice wine vinegar
 1 teaspoon stevia
 1/2 teaspoon sesame oil
 1 tablespoon flax seed oil
 1 teaspoon chili paste
 1/2 teaspoon toasted sesame seeds

In a small bowl, combine the soya sauce, stevia, flax seed and sesame oils, and child paste. Stir together, then add the vinegar.

In a medium bowl, add the cucumbers, and red peppers. Pour the dressing over the cucumbers and peppers. Top the cucumber salad with the toasted sesame seeds. Chill before serving
