Tomatoes are so great, I can never get enough of them! This is a delicious, decadent way to enjoy your fresh tomatoes. Try this for a vegetarian dinner option or as a side. If your not a big fan of fresh parmesan, mozzarella makes a nice substitute.

Step 1: Preheat oven to 400 degrees. Line the baking sheet with tinfoil, and lightly spread olive oil to prevent tomatoes from sticking. Mix the olive oil, balsamic vinegar, salt and pepper in a small bowl.
Step 2: Arrange the tomatoes evenly on the lined baking sheet and use a marinating brush to spread the olive oil and balsamic mixture on top and over the sides of the tomatoes.
Step 3: Top each tomato with 1/2 teaspoon pesto, followed by 1/2 tablespoon of Parmesan cheese.
Step 4: Place the baking sheet in the oven, and roast until the Parmesan cheese is melted and slightly blistered, about 18-20 minutes. Remove from the oven and serve. Enjoy!
