The trick to good potato salad is only to mix once – and add fried onions, if you’re not going to put the onions in then I’m not sure its worth the fuss.

Wash and chop potatoes – make sure they are the same size
Place in cold water on medium heat
Put pan on medium heat with a little oil to preheat
Mince onion and add to pan – season with salt and pepper
Mince – celery, pickle, capers, garlic, parsley, chili (if using)
Once potatoes are cooked, drain in collander and leave to drain for five min – don’t move around too much
To a large bowl add in the following order
mayo, celery, pickle, capers, garlic, potatoes, parsley – season with salt and pepper – mix until combined
